White chocolate, raspberry and pistachio mousse

Raspberries, pistachios and white chocolate milk all come together to make this delicious dessert that's quick and easy to make. 

Nutritional highlights

The Greek yoghurt provides us with a good amount of protein that not only helps support our muscles and bones but can also keep us fuller for longer.

Calcium - It also provides us with over 20% of our daily calcium requirement. Calcium is important in bone health but also for muscle contractions.

This dessert is low in saturated fat which can impact out cholesterol levels if we have too much from our diet.

Healthier Chocolate Yoghurt

Banana ice cream

Avocado, banana and walnut bread

Ingredients

Makes: 4 servings

Preparation time: 5 minutes

Chill time: 120 minutes

  • 180ml white chocolate flavoured milk
  • 2 tbsp honey
  • 500g 0% fat Greek yoghurt
  • ½ tsp vanilla extract
  • 150g raspberries
  • 40g pistachios, deshelled and crushed

Method

Pour the milk into a saucepan along with the honey and vanilla extract and gently heat.

Don’t let it boil and mix until all combined.

Spoon the Greek yoghurt into a bowl and pour the mixture on top.

Mix together very well before transferring to individual bowls.

Chill in the fridge for 2 hours then serve with the raspberries and crushed pistachios on top.

Healthy swaps/tips

  • To give it a sweeter taste add in a little more honey.
  • Swap in your favourite berries or nuts to make the topping.
  • To get your desired consistency reduce or increase the amount of milk used.
