Spinach and herb omelette

You can’t beat an omelette in the morning with this easy recipe that’s packed full of essential nutrients.

Nutritional highlights

Spinach is known as a superfood, which means its full of essential vitamins and minerals. It's also high in iron and vitamin C.

Iron - is essential in making haemoglobin, which is the oxygen carrying protein inside our red blood cells.

Vitamin C - our immune function and our skin health are supported by our intake of vitamin C.

Eggs are the other main ingredient in this dish and sometimes get a bad reputation for being unhealthy. By avoiding frying your eggs you can cut down on a lot of fat.

Vitamin B12 - Eggs are high in vitamin B12 and from two eggs we can get all we need that day in one serving of this recipe. Vitamin B12 is also needed to help release energy from our food, making red blood cells and keeping our nervous system healthy.

Ingredients

Makes 2 servings
Preparation time: 5 minutes
Cooking time: 5 minutes

  • 60g spinach
  • 4 medium eggs
  • 2 tbsp semi skimmed milk
  • 1 tbsp olive oil
  • 1 tbsp chopped parsley
  • 1 tbsp chopped basil

Method

Wash and chop the spinach leaves and don’t dry.

Crack eggs into a bowl, add the milk and herbs. Whisk the eggs until all the ingredients are incorporated.

Heat a pan, add the spinach and wait until the leaves wilt then remove.

Poor in the olive oil into a pan and ensure it covers. On a medium heat pour in the egg mixture. Tilt the pan to evenly spread the eggs. 

When the omelette starts to set add the spinach on top. Once it’s set cut into two and serve.

  • Why not add in peppers or cherry tomatoes to help make it more your own.
