Apple and plum chutney

This delicious chutney recipe is a great way to use up those apples from the tree in the garden during the autumn months.

Nutritional highlights

Apples are high in fibre and antioxidants, making them a great option going into the latter months of the year to fight off colds.

One apple can provide you with up to 11% of the recommended intake of Vitamin C for the day which, alongside being a powerful antioxidant, might even play a role in protecting our heart health.

Ingredients 

(Makes 3-4 jars)
Preparation time: 15 minutes
Cooking time: 2 hours 10 minutes

  • 1 tbsp olive oil
  • 1 red onion, finely chopped
  • ½ chilli, finely chopped
  • ½ tsp all spice
  • 100g dates, pitted and chopped
  • 400g plums, sliced and stones removed
  • 400g cooking apple, peeled and diced
  • 100g muscovado sugar
  • 150ml apple cider vinegar

Method

Heat the olive oil in a large saucepan and add the onion, chili and spices. Sauté for 10 minutes.

Add the dates, plum, apple, sugar and vinegar to the saucepan and leave to simmer for around 2 hours (until thickened and reduced), stirring regularly.

Remove from the heat and allow to cool slightly.

Spoon evenly into sterilised jars and cover with plastic lids whilst the mixture is still warm.

Leave for at least 14 days before enjoying to allow the flavours to develop.
