Oats three ways

Whether you like yours hot, cold or on the go, there are many ways that you can enjoy oats for breakfast. Try our three different oat recipes, including a porridge, overnight oats and bars.

Nutritional highlights

Oats are a real powerhouse when it comes to breakfast. The slow release of energy that they provide throughout the morning, along with the bulky fibre content means that we are on to a good thing when starting the day with oats.

Fear not if the warm weather makes a bowl of hot porridge less appealing, why not have your oats cold. Or if time isn’t on your side in the morning, why not try our breakfast bars which are great for on the go. Plus, all our recipes only use four ingredients!

Poppyseed and lemon porridge

Ingredients

(Makes 1 serving)
Preparation time: 4 minutes
Cooking time: 4-5 minutes

  • 1 lemon
  • 150ml milk (almond milk works great for this)*
  • 40g oats (rolled)
  • 2 tsp poppy seeds

Method

Squeeze the juice of one lemon and put to the side.

Into a pan add the milk and bring to a boil.

Add the oats then cook over a medium heat for 4-5 minutes, stirring regularly.

Finally, add the lemon juice and poppy seeds and stir thoroughly before serving.

Passionfruit overnight oats

Ingredients

(Makes 1 serving)
Preparation time: 5 minutes
Cooling time: 3 hours (ideally overnight)

  • 40g oats (rolled)
  • 100ml milk (coconut milk works great for this)
  • 2 passionfruits
  • 50g fresh pineapple (diced small)

Method

Add the oats to a container (old jam jars rinsed out are fun for this and a fantastic way to recycle) along with the milk.

Slice each passionfruit in half and scoop the contents into the oat mix.

Stir thoroughly, cover and place in the fridge to cool overnight (or for a few hours).

Remove from the fridge and mix in the fresh pineapple chunks – enjoy!

Apricot and nut breakfast bars

Ingredients

(Makes 4 servings)
Preparation time: 15 minutes
Cooling time: 30 minutes

  • 100g nut butter
  • 75g agave sugar
  • 125g oats (rolled)
  • 100g chopped dried apricots

Method

Heat the nut butter and agave in a pan over medium heat until the mixture becomes a smooth, pourable liquid.

Remove from the heat and add in the oats and dried apricot chunks.

Stir thoroughly combining all of the ingredients.

Spread the mixture evenly onto a non-stick baking tray and press down using the back of a spoon.

Place in the fridge to cool for 30 minutes.

Once cooled, cut into even servings and enjoy as breakfast on the go or a pick me up snack!
