Homemade Apple Cinnamon Syrup Latte
Makes 20 balls
Preparation time: 20 minutes
Freeze time: 1 hour
Firstly, using a food processor, pulse the pumpkin seeds until finely chopped.
Next, add the dates (ensuring you remove the stones), desiccated coconut, raisins, fresh ginger and cinnamon.
Pulse again until the ingredients start to stick together but making sure the mixture is not too smooth.
Remove from the processor, ready to roll into balls.
The mixture will be sticky (if it is too sticky to handle, freeze for 10 minutes until firmer).
With slightly damp hands, roll the mixture into balls (great way to get the kids involved) and then roll in remaining desiccated coconut.
Refrigerate for a minimum of 1 hour.
Keep in an airtight container in the fridge for 3 days or freeze (but thaw before eating).
